The Aitch Boner is responsible for removing the aitch bone from the inside round using their knife and paying close attention to detail not to damage product, they will use the following steps:Use hook to pull inside off conveyor. Use a knife to remove oyster meat from the bone. Use a knife to remove bone from the inside. Push insides onto conveyor. Place aitch bone into bone chute. Push trim down the trim hole. Steel Knife.
