Job Description:We seek an In-House Cheesemaker & Pizza Dough Specialist who has hands-on experience in crafting cheese and preparing pizza dough from scratch. This role is integral to our commitment to fresh, high-quality ingredients and will involve the production of cheese and dough for our menu, ensuring that each batch meets our exacting standards.
Key Responsibilities:
- Produce a variety of cheeses in-house, managing the entire process from milk preparation to aging, as needed
- Prepare fresh pizza dough daily, including mixing, proofing, fermenting, and portioning to ensure consistency and quality
- Work closely with the culinary team to incorporate house-made cheese and dough into menu items and seasonal offerings
- Maintain cleanliness, organization, and compliance with health and safety regulations in all production areas
Qualifications:
- Hands-on experience in cheesemaking, with knowledge of processes such as pasteurization, curdling, aging, and storage
- Proven expertise in pizza dough preparation, including understanding of fermentation, hydration, and texture techniques
- Strong attention to detail, with the ability to ensure consistent quality in both cheese and dough production
- Ability to work efficiently and collaboratively in a fast-paced kitchen environment
- Food handling certification preferred or willingness to obtain
