Overview:

Cook III

The incumbent in this position is responsible for preparing all cold foods, i.e., hors d'oeuvres, special banquets, sandwich spreads, salads and salad dressings.

1. Prepare all foods as assigned.

2. Maintain clean and well organized workstation.

3. Keep foods stocked and rotated.

4. Assist and trains new kitchen prep personnel.

5. Responsible for maintaining par levels of food items as assigned.

6. Assist in record keeping of foods issued.

WORKING CONDITIONS

Must have ability to:

• Operate in a working environment that is subject to varying noise levels, the severity of which depends upon work volume. Incumbents are at times subjected to hazards such as heavy spillage areas and dangers associated with the use of heavy duty cutlery and machine usage.
• Observe and direct actions of new pantry personnel.
• Inspect work performed and maintain areas for which responsible.
• Effectively and efficiently move around work area.
• Use all equipment associated with the position, including but not limited to choppers, slicers, and mixers.
• Balance, bend, carry, reach, squat, and twist so as to be able to move, retrieve and stock all necessary supplies. Must be able to lift up to 50 pounds, and push/pull up to 50 pounds.
• Follow recipes.

Understanding of proper food storage, handling and preparation. Knife handling skills. Understanding of preparation of dressings and salads. These skills and abilities are typically acquired through the completion of a culinary degree or recognized apprenticeship, and/or one year experience in cold food preparation.

In addition to the other duties described herein, each and every employee has the following responsibilities related to compliance with laws and regulations:

• Attend required training sessions offered by Golden Nugget Lake Tahoe.
• Perform the duties described in compliance with local laws and regulations.
• Take the necessary steps to ensure minors are not allowed to gamble or loiter in gambling areas, drink alcoholic beverages, or purchase tobacco.
• Have knowledge of the ordinances, regulations, laws, policies, and procedures relating to the employees department.
• Consult Internal Control Procedures and Policy Manuals for guidance.
• Report illegal activity to Security or the appropriate levels of Management.
