Responsibilities will include the management of all Culinary Department employees, development and execution of all culinary programs, management of budgets and costing, health and safety, and management of all vendor relationships.Essential Duties & Responsibilities
Direct oversight of all aspects of the Foley Family Wines Culinary Department across multiple propertiesResponsible for both the hiring and training of Foley Family Wines Culinary Department employeesResponsible for the development and execution of all culinary programs on and off site, including recipes for newsletters, website, ecommerce, and social media.Manages Culinary Department budget and costing associated to ensure profitability and drive wine sales and club conversionManages vendor relationshipsWorks collaboratively with Hospitality Centers, Events Department, Landscaping Department, etc. to develop and execute best in class food and wine programs that highlight brand equityEstablishes and maintains best-in-class food safety and service standards for Foley Family Wines Culinary Department and communicates all safety and cleanliness standards in accordance with county and state regulationsDevelops educational/interactive program(s) to drive new experiences both onsite, virtually, and in market.Trains all culinary team on new recipe execution and developmentResponsible for all local, state, and federal guidelines around food services rules & regulationsProvides staff education on all food and wine pairings, and partners with front of house management on developing service standards and trainingAny other duties assignedEducation & ExperienceCollege or culinary training or 10 plus years of culinary experience, including management experience.Commitment to quality service and food and beverage continuing educationKnowledge of kitchen training techniques and food and wine dynamicsAwareness of local, state and federal health and sanitation requirements5+ years of fine dining culinary experience5+ years' plus management experienceExperienced food ordering and procurementComputer skills and ability, including MS Office Suite and TockValid California's Manager's Food Handler's CertificateUnderstanding of proper use of kitchen equipment, such as stoves, refrigeration, slicers and knivesKnowledge, Skills & Other Abilities:A self-starter with a commitment to excellence and high standardsStrong organizational, problem-solving and analytical skillsExcellent customer service skillsWine knowledge and ability to pair food and wine in a dynamic environmentVersatility, flexibility, and a willingness to work within constantly changing priorities with enthusiasmAbility to be a team player and model teamworkPositive role model and ambassador for Foley Family Wines in the wine industry communityMaintain high standards of quality control, hygiene, health and safetyWorks flexible schedule including evenings, weekendsPhysical Demands:Must be 21 years or olderAn employee in this position will be performing a wide variety of tasks requiring attention to detail, calmness and creativity in dealing with employees and customers, and the ability to think and react quickly under pressureAbility to communicate in a clear, understandable speaking voice, capable of communicating information to fellow employees, vendors and guestsAccurate and clear vision and hearing. This range is what we reasonably expect to pay for this role. The actual compensation offered will be based on several factors, including but not limited to, qualifications, skills, experience, education, internal equity, and alignment with market data.
