Maintenance of kitchen and work area in a clean and orderly manner. Train and lead Food Service workers, Youth Center Cooks IT and I. Monthly reports to the Food Service \\Administrator/Manager as required. As needed act as direct care staff and may be required to assist in staff support calls and watch youth as needed. This relates to the mission by providing safe, nutritious meals for youth housed at a residential program.\n\nPOSITION DUTIES\n Preparation\nof food requiring the use of both simple and complex standardized recipes for a\nquantity food service operation. Adherence to food safety/ sanitation practices\naccording to HACCP-based standard operating procedures. Follow the Child\nNutrition Program by practicing portion control and following provided menu.\nUse the proper weight and portions. Ready and available to work unscheduled\ntimes and overtime due to staff shortages and emergencies.\n\n\n Delivery\nof prepared food to the food service line. Presentation and delivery of\nrequired dietary items at the point of service. Responsible for keeping a\nprofessional rapport with the youth/staff you are serving. Checks the tray line\nperiodically to ensure the service line is supplied with food.\n\n\n Provide\non-the-job training to youth that are selected to learn more about the food\nservice department or other culinary aspects of the trade.\n\n\n Compile\nmonthly food cost reports. Responsible for accurate perpetual inventories, as\nwell as records.\n\n\n Maintain\nall records for cost purposed necessary for food reports. Determine food and\ncleaning supply quantities needed. Consult with Food Service\nAdministrator/Manager to requisition items needed.\n\n\nMINIMUM QUALIFICATIONSEducation:Graduation from an accredited high school or possession of high school equivalency certificate acceptable to the Maryland State Board of Education as described in the Maryland Correctional Training Commission regulation.\nExperience: Two years of experience supervising youth in the preparation and serving of meals in a juvenile facility or juvenile services community program for at-risk youth.\nNotes: \n1. The above educational requirement is set by the Maryland Correctional Training Commission in accordance with the Correctional Services Article, Section 8-209, Annotated Code of Maryland.\n2. Candidates may substitute U.S. Armed Forces military serviceexperience as a non-commissioned officer in Food Servicesclassifications or Food Services specialty codes in the Equipment, Facilities and Services field of work on a year-for-year basis for the required experience.\nSELECTIVE QUALIFICATIONS\nApplicants must meet the minimum and selective qualifications to\nbe considered. Include clear and specific information on your application\nregarding your qualifications.\n\n\n\nCandidates must possess current Maryland Correctional Training\nCommission (MCTC) certification.\n\n\nDESIRED OR PREFERRED QUALIFICATIONS\nPreference\nwill be given to applicantswho possess the following preferred\nqualification(s).Include clear and specific information on your\napplication regardingyour qualifications.\n\n\n\n Two years of experience in the preparation of food involving the cooking of\nmeats and vegetables and the preparation of salads and beverages in an\ninstitutional setting such as hospitals, nursing homes, universities or\ncorrectional facilities.\n\n\n Possession\nof a ServSafe Certification.\n\n\n One year of experience in the Federal Child Nutrition Program.\n\n\nLICENSES, REGISTRATIONS AND CERTIFICATIONS1. Candidates must be fully certified by the Maryland Correctional Training Commission prior to appointment and are required to maintain certification while employed. \n2. Employees in this classification may be assigned duties which require the operation of a motor vehicle. Employees assigned such duties will be required to possess a motor vehicle operator's license valid in the State of Maryland. \nSPECIAL REQUIREMENTS1. In accordance with the Correctional Services Article,Section 8-209of the Annotated Code of Maryland,the Maryland Correctional Training Commission shall establish the minimum qualifications for probationary or permanent appointment of a Department of Juvenile Services employee. These requirements are listed in detail in the Code of Maryland Regulations 12.10.01.04, general regulations of the Maryland Correctional Training Commission, and include:\nU.S. Citizenship or Resident Alien status\nMust be at least 21 years of age\nA thorough background check, including fingerprinting and drug testing\nAn oral interview, and\nPhysical and psychological examinations. \n2. Employees in this classification may be subject to call in and, therefore, may be required to provide the employing agency with a telephone number at which they can be reached. \n3.
