Job DescriptionPOSITION SUMMARY The restaurant food expeditor is integral to the restaurant operation. The food expeditor will be responsible for graciously controlling the board, delivering food to tables and assisting the kitchen in set-up and breakdown of the kitchen pass within the restaurant. This individual will be responsible for the extensive knowledge of the food menu, OS&E, restaurant flow and culinary efficiency. The food expeditor will constantly be in communication with the service team, management, Executive Chef and culinary team. DUTIES AND RESPONSIBILITIES Including but not limited to the following:
- Set up the expo line to Chef's specifications daily
- Make sure plates, serving utensils, etc are always stocked in the kitchen
- Superior understanding of organizing incoming tickets.
- Dictation of food deliveries
- Excellent and precise menu knowledge
- Deliver food to guests describing each dish properly
- Performs tableside service of dishes (ie. whole fish)
- Assist with moving clean plates from dish area to assigned places in the kitchen and front of house
- Support the chef as needed
- Prepare for each shift by ensuring the section and side stations are properly set up
- Perform all assigned opening sidework
- Participate in discussion in daily rally
- Perform all necessary closing duties as assigned
- Properly maintain strict standards of cleanliness of all dining areas
- Properly maintain strict standards of cleanliness and organization of all service stations/areas
- Maintain company standards of presentation, uniform, etc.
- Consistently exceed guest expectations
- Recognize regular and repeat guests
- Personalize service for each guest
- Knowledge of artisan wares - makers, process, etc.
- Adhere to Auberge Resorts Collection and Mattei's Tavern standards, policies and procedures
$17.51/hr QualificationsREQUIRED QUALIFICATIONS
- Expert menu knowledge - every ingredient of every dish on the menu, including allergens and possible modifications
- Deep knowledge of cookings styles, techniques and ingredients
- Working knowledge of all beverage offerings - cocktails, spirits, wines, etc.
- Speed and attention to detail
- Calm, clear, organized and concise communication to all members of the team
- Ability to be flexible and adapt to a variety of service settings including dining, events, etc.
- Has a proprietary interest in the success of the restaurant at all times
- Is committed to the success of all teammates
- Responsible Beverage certification
- ServSafe certification or equivalent
PREFERRED QUALIFICATIONS
- Prior experience in a fine dining and high volume atmosphere or luxury hotel experience.
