The Department of Corrections, Division of Institutions, is recruiting for a Food Service Lead position, at the Spring Creek Correctional Center (SCCC) located in Seward, Alaska. What you will be doing:Leads prisoner kitchen workers in the preparation and production of meals for approximately 550 prisoners and 30 staff per meal at Spring Creek Correctional Center in the APS main kitchen. Maintains security and control of prisoners in the absence of Correctional Officer staff. Ensures meat pulls are consistent with prepared menu, oversees actual preparation and serving of food to inmates and staff. Ensures that all modified diets are properly prepared for each meal, which includes, but is not limited to, vegetarian, diabetic, allergy, disruptive inmate diets, religious diets, and other diets as prescribed by the Medical Department. Oversees the production and preparation of all bakery items served at SCCC. Ensures the proper baking and preparation of all breads, e.g., sandwich, hot dog buns, hamburger buns, French bread, wheat and rye breads. The institution has a capacity of over 500 male inmates and employs approximately 200 staff. While much of Spring Creek's inmate population serve long-term sentences, we also house prisoners serving shorter sentences.
