- Assist with interviewing, hiring, evaluating, and terminating all food service civilian and inmate employees.
- Train (continuous training program) and instruct all employees, i.e. cooks, bakers, kitchen and dining help in all phases of their duties, to include training in the daily sanitation program.
- Supervises all food service personnel in the performance of their daily duties.
- Acts as a correctional officer in maintaining internal security of all food, supplies, and equipment.
- Acts as correctional officer by ensuring internal institutional security when performing shakedowns, and escorting inmates.
- Responsible for the accurate preparation of all food orders done weekly.
- Responsible for the accurate deliveries.
- Prepare cook's worksheet in strict accordance with SCDC master menu and maintain records for a 5-year period.
- Responsible for fiscal records for budgetary purposes.
- Meet with health, fire, and OSHA inspectors.
- Responsible for ensuring that required maintenance is done.
- Work orders are placed as necessary on needed repairs.
- Make equipment replacement recommendations and cafeteria renovation recommendations.
- Member of the Administrative Manager's immediate staff.
- Serves on adjustment and classification committee.
- Performs other related duties.

- A high school diploma and supervisory experience in quantity and quality cooking.
- Two (2) years of experience in quantity and quality cooking.
- Must be certified as a hazard analysis and critical control point (HACCP) and/or servsafe manager or must attain certification within six (6) months of employment.
- Preferred requirements: two (2) or more years experience in a correctional environment preferred.
