- Abide by Department of Health and OSHA regulations regarding proper kitchen hygiene and maintenance.
- Ensure that quality and quantity of food meet standards for meal patterns established by designated regulatory agencies (i.e. USDA, CACFP, etc.).
- Receive and inspect incoming products for quality and quantity, and ensure prompt and proper storage.
- Supervise and participate in the requisition, inspection, preparation, cooking and portioning of food in accordance with quality standards.
- Participate in menu planning.
- Prepare meals accurately according to written recipes.
- Recommend changes in recipe/cooking method to improve quality of food.
- Supervise and coordinate daily activities of staff engaged in food preparation, meal service and cleanup.
- Ensure safe handling and proper temperature control of prepared foods.
- Supervise packaging and delivery of meals to satellites and to the homebound.
- Forecast specific quantities of items to be produced and maintain necessary food production record.
- Maintain monthly inventory.
- Submit food orders to vendors in a timely manner.
- Ensure security of refrigerators, freezers, storerooms, and office before leaving for the day.
- Check cleanliness and sanitation of kitchen, and equipment, dining areas, and adherence to sanitation standards.
- Supervise and participate in the training of cooks and other kitchen personnel in their duties and responsibilities.
- Plan and conduct meetings of subordinates as needed, in the absence of program coordinator/director.
- Consult with Coordinator as to schedules, menu and any other problems.
- Perform additional duties as assigned by manager.
QUALIFICATIONS
- High school diploma or equivalent credentials.
- Two to three years' experience.
- Supervisory experience preferred.
- Valid Food Protections Certificate.
- Proficiency in the safe operation of all kitchen equipment and Department of Health regulations.
- Valid driver's license preferred.
- Strong oral and written communication, time management and organizational skills are necessary.
- Proficiency in Microsoft Office suite and other standard business technology is required.
PHYSICAL REQUIREMENTS
- Ability to perform repetitive hand/arm motion daily (i.e. scooping, cutting).
- Ability to occasionally lift and/or move up to 50 pounds.
- Ability to stand, walk, crouch, or sit for long periods of time.
