ABOUT CASA COLINACasa Colina was founded in 2023 in Estes Park, Colorado and located in the newly renovated Trailborn Rocky Mountains hotel! We start the day with breakfast burritos and strong coffee and the dinner menu centers around (mostly) hand-held Mexican-inspired cuisine alongside a fun and elevated tequila and mezcal bar program. We source ingredients from around Colorado as much as possible, working with local farms and small businesses.We are looking for passionate and dependable Line Cooks to join our team. - Read, measure, and execute recipes.
- Maintain a solid menu knowledge and attention to detail with plate presentation
- Maintain a solid knowledge, understanding and preparation of base sauces, stocks and soups
- Effectively communicate with management, chefs, and service staff in order to fulfill and address any issues or needs requested by guests and or other employees.
- Exhibits a solid knowledge, understanding and application of various cooking techniques.
- Versatile in preparing both hot and cold items.
- Prepare and service all food items according to hotel recipes and standards.
- Actively share ideas, opinions, and suggestions in daily shift briefings.
- Maintain proper rotation of product in all chillers to minimize wastage/spoilage.
- Ensure storeroom requisitions are accurate.
- Ensure the cleanliness and maintenance of all work areas, utensils, and equipment.
- Follow kitchen policies, procedures, and service standards.
- Follow all safety and sanitation policies when handling food and beverage.
- Ensure all products are rotating on a first-in, first-out philosophy.
Requirements:
- Previous experience in the Culinary field required
- Diploma Certification in a Culinary discipline an asset
- Strong interpersonal and problem solving abilities
- Highly responsible & reliable
- Ability to work well under pressure in a fast paced environment
- Ability to work cohesively as part of a team
- Ability to focus attention on guest needs, remaining calm and courteous at all times
- Able to handle service and stay organized in a busy restaurant
- Able to work within the guidelines of the Companies Fire, Life and Safety Program and transfer the knowledge to Colleagues.

Physical Requirements:
