Role Overview:A Treehouse Pastry Lead is the creative and technical expert behind our pastry and baking program, responsible for crafting exceptional desserts, baked goods, ice creams, and other pastry needs. This role oversees all aspects of pastry preparation, from doughs to plated desserts, ensuring quality, consistency, and innovation. You'll collaborate with the culinary team to execute menus that delight our guests across a variety of dining experiences, including banquets, casual dining, and our signature restaurant Valley Goat.
Key Responsibilities:- Lead the pastry and baking program, including the preparation of desserts, breads, ice creams, and doughs.
- Execute high-quality, creative recipes to specification, under the guidance of the culinary team.
- Oversee the production of pastries and baked goods for all dining outlets, including banquets, caf, beer garden, and restaurant service.
- Maintain consistency in presentation, flavor, and texture across all pastry offerings.
- Manage mise en place for pastry stations, ensuring readiness for service.
- Adhere to and enforce food safety and sanitation standards, ensuring a clean and organized pastry production space.
- Assist with inventory management, including ordering and proper storage of pastry-specific ingredients.
- Provide guidance and training to team members on pastry techniques, fostering a collaborative and supportive environment.
Skills and Qualifications:- 3+ years of professional experience in pastry and baking, preferably in high-volume or fine dining establishments.
- Expertise in pastry techniques, including dough preparation, ice cream production, and dessert plating.
- Strong organizational and multitasking skills to manage production for multiple dining outlets.
- Attention to detail and a commitment to quality, consistency, and creativity.
- Ability to collaborate with the broader culinary team to ensure seamless integration of pastry with other menu elements.
- Familiarity with kitchen weights, measurements, and recipe adherence.
- Flexibility to adapt to a fast-paced environment and meet the diverse needs of various dining programs.
- Passion for pastry and a willingness to inspire and mentor others.
