  • Completing the prep list items that are your responsibility
  • Making sure other morning prep cooks are on task and completing their projects
  • Keeping the kitchen CLEAN, (ie: dish sinks are not backed up, prep tables are clean (no random junk, just the projects being worked on at the moment), floors are tidy)
  • Orders are put away and CHECKED IN
  • Daily cleaning list is followed and signed off on
  • Line items are backed up for the day in size appropriate containers
  • Big batch items are cooled properly. (Gravy, Soup, Wings, Pasta, Corn, Brussels, Peas)
  • Prep work done with efficiency, projects started at the right time, multi tasking whenever possible
  • Recipes are being followed by yourself and others
  • Speaking up when things are not being done correctly and holding others accountable for their work
  • Prep items placed in the walk-in in the correct places, basic walk-in cleaning
  • Proper rotation of produce and other perishable products
  • Helping on the line when business dictates and keeping the standard of food high
