We are looking for a Proofer-Baker for our industrial bakery. Bakewise Brands, Inc. produces bagels in Macedon, NY. The position is a 6 pm to 6 am position on night shift. However, the first few months, training will occur on day shift (6 am to 6 pm).Job Title: ProoferDepartment:ProductionReports to: Shift ManagerFLSA Status:Non-ExemptDate Revised: 6/1/2023SummaryThe Proofer is responsible for the entire proofing, boiling, drying, and baking of the bagel.Following food safety, quality, and food regulatory requirements are critical when producing our product.In accordance with all company policies, the essential duties include, but are not limited to the following:Essential Duties and Responsibilities1.Follow all company policies including: GMP's, HACCP, safety procedures, and product quality standards.2.Acquire a strong understanding of the dough and its relation to the finished product.3.Monitor the formed dough through the entire proofing, boiling, drying, and baking process.4.Adjust the proof box temperature and humidity as per chart unless otherwise agreed upon with the Shift Manager.5.Adjust the fan in the resting zone per product condition and flavor change.6.Adjust the boiler speed to best suit the product and the conditions.7.Adjust the oven speed and or temperature to keep the color of the bagel in specification.8.Monitor and adjust controls to ensure the bagels are within specification.9.Monitor the dough batches for any conditions that may affect proofing or baking.10.The back-up for this position is the Mixer Operator.11.All specific work instructions are provided during on-the-job training.Secondary Duties1.Assist in the training of new Proofers.2.Communicate with the Shift Manager on any changes in the system or setting changes made.3.Communicate and cooperate with the incoming Proofer-Baker.4.Communicate any finished product changes to the Packing Manager.5.The completion of accurate record keepingQualifications•HS Diploma or GED•1 year of baking or packaging experience required•Excellent attention to detail, ability to work in fast paced environmentPhysical DemandsMust be able to stand for 12 hours and lift 50 lbs. Work EnvironmentConditions in the proof box are 90-110 degrees with a humidity level of 60-80%.Minimum Salary: 21 Maximum Salary: 21.35 Salary Unit: Hourly
