Title: 3rd Shift Sanitation Manager
Location: South Holland, IL
Salary Range: $90K to $110K plus a bonus

Position Description:
We are seeking a skilled and motivated Third Shift Sanitation Manager to oversee all aspects of sanitation operations for cooked meat and oil recovery, as well as supervise third shift activities at our South Holland plant. The ideal candidate will have extensive experience in food safety, sanitation, and leadership, and will be responsible for ensuring that all sanitation activities align with company standards and regulatory requirements.
Primary Responsibilities:
- Coordinate and/or facilitate training sessions on safety, chemical usage, and sanitation procedures for sanitation and other employees across all locations.
- Manage all third shift employee activities, including scheduling and assigning work.
- Supervise department employees in their daily activities, including training, motivating, disciplining, and evaluating staff.
- Maintain department staffing levels by selecting and orienting new employees.
- Establish standards for pre-op, post-op, and microbial and bioluminescence swabbing, and direct sanitation activities to ensure standards are met.
- Ensure compliance with the Master Sanitation Schedule, driving continuous improvement in sanitation processes.
- Participate in federal and third-party food safety audits, providing corrective actions as necessary.
- Monitor and control sanitation costs, including chemicals, equipment, supplies, and labor.
- Serve as the liaison with on-site government officials.
- Manage and eliminate deviations in the Listeria prevention and control program.
- Participate in sanitary design reviews of equipment to ensure compliance with sanitation requirements.
- Lead efforts with operations managers and sanitation teams to improve sanitation and food safety programs.
- Participate as a core team member of the HACCP program.
- Evaluate and implement in-process and customer specifications to meet production standards.
- Report on relevant KPIs and create improvement programs to optimize performance.
- Ensure employee safety and adherence to all state, federal, and company regulations.
- Initiate cost-effective plans and processes to minimize manufacturing costs while maximizing efficiency.
- Ensure production runs on time and meets quality assurance specifications.
- Ensure timely completion of Preventive Maintenance (PM) and direct the third shift maintenance supervisor accordingly.
- Manage operations in Cook and Chill to optimize production capacity.
- Supervise and lead the third shift Trim Operation to meet quality and yield goals.
- Oversee sanitation team members in disassembling, cleaning, setting up, and reassembling equipment after pre-op.
- Ensure the production floor is properly cleaned and pre-op is conducted and released on time for production startup.
Requirements:
- Bachelor of Science degree in a related field.
- 5+ years of experience in food safety and sanitation within a manufacturing or food production environment.
- 3-5 years of management experience.
- Mechanical skills and knowledge of food processing equipment.
- Strong working knowledge of USDA guidelines, SSOP, SOP requirements, and HACCP.
- Proficiency in micro sample collection and analysis, including the ability to interpret results and take corrective actions.
- Proficient with computers and various software packages.
