Position Summary:The Smoker position is responsible for preparing & smoking meat consistently, ensuring excellent quality according to Company specifications in a fast paced-quick service restaurant environment. II. Responsibilities:
- Practice safe food handling and cleanliness at all times.
- Practice proper knife handling procedures and demonstrate a high level accuracy with cutting to standards while maintaining pace and intensity.
- Follow proper company recipes & preparation standards to prepare meat for the smoker.
- Load proteins into the smoker based on restaurant pars set by management record daily inventory and report to General Manager.
- Read and interpret all catering orders on a daily basis to independently assess if amount of meats loaded is adequate and plan the timing of meats being loaded in the smoker to meet the needs of catering orders and the opening of the restaurant.
- Communicate with other team members to ensure accuracy and guest satisfaction.
- Clean smokers on a daily basis and perform routine deep cleaning and maintenance which may involve climbing inside smoker equipment to detail parts.
- Maintain a clean, organized and fully stocked work area at all times.
- Operate and participate effectively in a team environment.
Requirements:Must be 18 years old and candidate must be able to:
- Maintain a high degree of pace and intensity for an extended period of time while performing with quality and accuracy.
- Withstand exposure to possible food allergens including but not limited to; meats, fish, nuts, dairy, and oils
- Withstand exposure to and work with cleaning chemicals.
- Demonstrate basic understanding of equipment operations and ability to troubleshoot and perform maintenance using basic hand tools and cleaning equipment.
- Lift up to 90lbs constantly.
- Lift from floor to shoulder constantly and overhead infrequently.
- Twist, reach, & bend frequently.
- Listen to and comprehend instructions from Leads, Managers, and coworkers over background restaurant and equipment noise constantly.
- Frequently wash hands.
- Adhere to early morning schedule and be on time for shifts.
- Work independently with little supervision.
- Adhere to company uniform and appearance policy.
Skills/Qualifications of Ideal Candidate:
- High School degree or equivalent preferred and/or 1 year experience in related industry.
- Good communication skills, friendly and polite demeanor.
- Strong knowledge of commonly-used concepts, practices, and procedures in a restaurant.
- Strong interpersonal skills; team player.
