Position Summary

As theKorean Food Production Leader, you'll be at the forefront of our culinary operations, ensuring every dish captures the authentic flavors of Korea while maintaining the highest standards in quality and safety.The job incumbent is responsible for the preparation of high quality airline meals in accordance with company standards, menu specifications and production schedules. He/she is also responsible for overseeing kitchen helpers in the preparation of meals, while meeting required safety, hygiene and quality standards.

How You'll Elevate Our Team

Food Production

  • Oversee and execute Korean food production, including preparation, seasoning, marinating, and cooking.
  • Monitor inventory, order ingredients, and ensure daily production goals are met.
  • Innovate by contributing to the development of new Korean menu items for client presentations.
  • Maintain budgetary controls by minimizing waste and optimizing resources.
  • Respond to customer feedback and implement improvements to exceed expectations.
  • Assumes responsibilities of Executive Chef when he/she not available ie. Vacation, off-days, menu presentation to customers, etc.
  • Supervise, coordinate and control kitchen helpers in food storage (e.g. maintaining tidiness, following the first in - first out principle)
  • Monitors material consumption and orders required food and equipment on a daily basis to satisfy the daily production plan
  • Participates in the development of food products and menus as needed for menu presentations
  • Must be aware of content in catering manuals; conducts updates when necessary
  • Executes countermeasures in the production in case of customer complaints

Quality

  • Lead quality control efforts, ensuring compliance withHACCPand hygiene regulations.
  • Conducts quality checks of goods received
  • Monitors and ensures compliance with recipe specifications

Leadership

  • Ensure that the area of responsibility is properly organized, staffed and directed
  • Mentor and train team members to achieve culinary excellence.
  • Make the company's values and management principles live in the department(s)
  • Participate and support company sponsored initiatives such as Global Quality Standard (GQS), HACCP, Lean Manufacturing
Your Recipe for Success
  • Experience: 3-5 years in commercial cooking, with expertise in Korean cuisine. Culinary school certification or apprenticeship preferred.
  • Language Skills: Fluency inKorean and Englishis required.
  • Regulatory Knowledge: Strong understanding of HACCP and food safety standards.
  • Leadership: Proven ability to guide and motivate a team.
  • Organizational Skills: Adept at managing productivity, stock, and quality in a fast-paced environment.
  • Tech-Savvy: Proficient in Microsoft Office and Windows-based applications.
