Position Summary: The Sushi Production Cook is responsible for ensuring that all sushi ingredients are prepped to recipe standards. They are also responsible for ensuring that all product is held according to CA health department standards. Daily Responsibilities:
- Breaking down fish into useable, identical portions.
- Cooking and seasoning sushi rice.
- Producing all garnishes for sushi dishes.
- Producing rolls, sashimi, and nigiri.
- Cleaning and sanitizing the sushi station daily according to health department standards
- Communicating ordering needs to the chefs on a daily basis.
- Rotation of all product according to FIFO to ensure high quality product.
- All other duties as assigned.
Physical Requirements:
- Must be able to stand, walk, lift, and bend for extended periods of time.
- Must be able to bend and lift up to 40 lbs.
- Role may include job duties or tasks requiring repetitive motions.
- Exposure to hot kitchen elements or cleaning materials.
Skills/Experience:
- At least 1 year in a sushi production/sushi cook role or role with similar experience.
- Team player and able to anticipate others' needs.
- Positive attitude.
- Must have valid, non-expired Food Handlers' card.
- Ability to work a flexible schedule including evenings, weekends, and holidays when needed.
