Description.The City of Lynchburg is an Equal Opportunity EmployerPerforms difficult human support and routine administrative work participating in and supervising all food service activities using discretion and independent judgment within the secure detention facility, by performing the following duties.Essential DutiesESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties to provide direct or indirect service to the citizens may be assigned.* Plans, coordinates, assigns and oversees the preparation, cooking and serving of food.* Participates in the interviewing, selecting and training of food service staff.* Plans, directs, reviews and evaluates the work of the food service staff.* Instructs food service staff in the operation of equipment and utensils, and in the preparation, cooking and serving of food in accordance with good dietary principles and food service methodology.* Handles scheduling of food service staff to ensure adequate coverage.* Plans menus and ensures that food is cooked in quantities according to menus, good dietary principles and number of people served.* Orders food and supplies, receives and accounts for same, and maintains perpetual inventories as well as cost and food consumption records.* Maintains USDA records, submits monthly and semiannual reports for review and approval.* Oversees and coordinates the cleaning and maintenance of culinary utensils, equipment and work areas.* Inspects kitchen equipment, storeroom and foods to maintain proper sanitation and operation.* Monitors food service staff's compliance with guidelines provided by the local Health Department and the Department of Juvenile Justice (i.e., special diets for medical and/or religious reasons, etc.).ADDITIONAL DUTIES AND RESPONSIBILITIES include the following:* Other duties to provide direct or indirect service to the citizens may be assigned.* When unusual situations occur and/or the City Manager declares a State of Emergency, all City employees may be required to accept special assignments and perform as needed to ensure appropriate service delivery.* Assists in the preparation, cooking and serving of food as required to include such activities as meat cutting, baking of pastries and the like.SUPERVISORY RESPONSIBILITIESDirectly supervises cook staff. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.Minimum Education and Experience RequiredQUALIFICATIONS To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.EDUCATION AND EXPERIENCEHigh school diploma or general education degree (GED), supplemented by college level courses in home economics, food nutrition or related field; considerable food service experience in an institutional setting, or any combination of education and experience.Additional RequirementsMust also have 'Serve Safe' Managers Certification.Prior to employment, a Criminal Record check and reference check, Child Protective Services check, and tuberculin and drug screen as part of the physical examination must be completed.Possession of valid Virginia driver's license and acceptable driving record according to City criteria.View Criteria.Must successfully complete IS100 and IS700 National Incident Management (NIMS) training within 90 days of employment. May also be required to complete higher levels of NIMS training as determined appropriate for the position.
