DescriptionGENERAL DESCRIPTION: To provide high quality food service to all residents and employees. The basis objective is to promote optional nutritional status for each resident by providing a diet in accordance with physician's orders and consistent with the resident's ethnic, cultural and religious and general food preferences and restrictions which the facility can readily accommodate. The food service will be on duty thirteen hours a day to prepare meals. The department will provide the food for special occasions. MAJOR DUTIES AND RESPONSIBILITIES:
  • Respects and shows kindness to all residents.
  • Protects and maintains confidentiality of residents' information and residents' rights.
  • Coordinates dietary functions
  • Prepares meals according to menu
  • Follows recipes
  • Responsible for prep work for next meal each day.
  • Maintains clean work area at all times.
  • Assures that floors are free of spills and debris.
  • Responsible for washing pots and pans.
  • Records daily sanitation evaluations.
  • Records daily temperatures on foods.
  • Records daily temperatures on refrigerators and freezer.
  • Performs tasks on cleaning schedule, as assigned
  • Responsible for serving meals.
  • Responsible for making sure meals are served in a timely manner.
  • Performs daily tasks in accordance with infection control procedures and isolation procedures.
  • Follows dietary policy and procedures.
  • Informs dietary manager of any diet changes from nursing.
  • Responsible for preparing foods for special activities.
  • Responsible for putting stock away.
  • Attends dietary meetings.
  • Attends facility in-services.
  • Reports malfunctioning equipment to dietary manager.
  • Occasionally changes schedule or works overtime to meet the needs of the dietary departments.
  • Helps other staff as time permits.
  • Responsible for storing, labeling, and dating all food in production.
  • RESPONSIBILITY AND DECISION-MAKING AUTHORITY:
  • Decision making is limited to specific responsibilities as assigned by Culinary Services Supervisor.
  • Responsible for the overall operation of kitchen but not the daily tasks of the dietary aids. More specifically, the cook is responsible for serving times of the residents; any direct care or changes for the residents; staff during emergencies and to open and/or close the kitchen.
  • EDUCATION & EXPERIENCE:
  • Require applicant to be at least 16 years of age with minimum of 10th grade education.
  • Work permit required if under 18 years of age.
  • Required to attend all mandatory in-services.

  • SPECIFICATIONS - MENTAL/PHYSICAL:
  • Performs tasks in confined setting for entire shift.
  • Heat, air conditioning, and humidity are controlled by the facilities central system with variations in temperature on either side of the normal 72 degrees.
  • Exposure to 0 degree temperature in freezer.
  • Exposure to 35 degree temperature in cooler.
  • Exposure to increased temperature and humidity near cooking battery.
  • Exposure to constant stress of working with sick residents and their families.
  • Exposure to residents who are confused, irrational, demanding, and agitated.
  • Lifts routinely, objects weighing up to 75 lbs.
  • Stands and walks on hard surface entire shift.
  • Bends, stoops, and turns often.
  • Exerts considerable force in pulling and pushing daily.
  • Hearing ability must be sharp to understand residents and their needs.
  • Visual Ability must be sharp to read recipes and spread sheets.
  • Ability to think clearly and react calmly during emergency situations and assist with possible evacuation of residents.
  • RELATIONS WITH OTHERS:
  • Maintains cordial relations with residents and their families.
  • Communicates clearly and maintains a cooperative spirit with staff.
  • LEARNING PERIOD REQUIRED:
  • Ninety (90) day probationary period.
  • WORK ENVIRONMENT:
  • Indoors: works in well lighted and ventilated areas. Subject to possible falls, odors and injuries from equipment. May be exposed to infectious waste, diseases, chemicals and various viruses, including Hepatitis B and AIDS.
  • Outdoors: possible exposure to weather extremes.
