SUMMARY:

Prepares various hors d' oeuvres, cutting, chopping of lettuces, vegetables, fruits and other foodstuffs by following specifications of standardized recipes. Use of proper bowls, trays, plates, and pans to maintain customer appeal. Cleaning and sanitizing of workstation making sure everything is covered, labeled, dated, and rotated to ensure quality and healthy food.

ESSENTIAL SKILLS, DUTIES & RESPONSIBILITIES:

  • Prepare bulk produce to specifications.
  • Preparation of cold dishes, such as salads, cheese boards, chilled soups, and desserts to specific guidelines.
  • Portion meats, vegetables, and other food items to proper weights or volumes.
  • Store ingredients to keep them fresh and reduce food wastage.
  • Check food plating, temperature, and portions for all cold dishes.
  • Monitor stock and place orders, as needed.
  • Perform any general cleaning tasks using authorized, institutional labeled cleaning products as assigned to adhere to health and safety standards.
  • Assists in training and supporting of new employees.
  • Attend training, safety, pre-shift, and departmental meetings as scheduled. Perform side work as directed by management.
  • To perform this job successfully, an individual must be able to perform each duty satisfactorily.
  • Performs miscellaneous duties as required.

MINIMUM QUALIFICATIONS:

  • High School Diploma or equivalent.
  • Work experience as a Pantry, Prep Cook, or similar role.
  • Good knowledge of food plating techniques.
  • Strong communication, time and resource management, and planning skills.
  • Ability to work in hot, hectic environment, stand, walk, bend, use hands and appliances, and lift heavy items for extended period.
  • Perform any general cleaning tasks using authorized, institutional labeled cleaning products as assigned to adhere to health and safety standards.

EDUCATION:

  • High School diploma or GED (preferred)

LICENSE REQUIREMENTS:

Must be able to successfully pass a pre-employment drug screen, background investigation, and maintain a Pauma Gaming Commission License.

PHYSICAL/MENTAL REQUIREMENTS: (*Constantly, Frequently, Occasionally)

  • Ability to lift 50 pounds.
  • Ability to stand during entire shift.
  • Constantly walking and standing.
  • Constant hearing and seeing.
  • Constantly balancing, bending, reaching, twisting, holding, wrist motion, and stooping.

WORKING CONDITIONS:

  • Work is performed indoors in a climate-controlled environment.
  • Close spaces while working with others.
