Job Overview:
We are seeking a dynamic and dedicated Sous Chef to join our Hospitality team within Chartwells at Rugby School. This role involves assisting in the preparation, cooking, and presentation of food to the highest standards, ensuring customer and client satisfaction, and maintaining a clean, tidy, and safe environment.
Catering for a wide variation of events across the school.
Full time, 40 hours per week contract, shifts will include evenings and weekends due to the nature of the business within the boarding school
Key Responsibilities:
Customer and Client Satisfaction
- Prepare, cook, and present dishes to the required standards and portion specifications.
- Ensure food is recovered and stored correctly to minimise waste.
- Maintain the cleanliness of all kitchens and surrounding working areas.
- Ensure the correct use of all machinery and equipment.
- Contribute to menu development as required.
- Assist in the overall management of the cleanliness and general housekeeping of the kitchen, back of house, service & waste areas.
- Implement new policies and procedures as requested by the senior team.
- Support and assist other staff members across the site as required.
- Perform other general tasks to support effective food service delivery as reasonably requested.
Stock Management
- Assist in the management of ordering and menu planning to stay within budgets.
- Utilise stock in an effective and efficient manner.
Management of Team
- Assist in leading the team by setting clear direction and goals for junior staff members.
- Support the senior team through effective communication and by following their lead.
- Take responsibility for the training and development of the kitchen team.
- Assist in the rota management of kitchen support teams.
- Ensure a succession plan is in place that supports the company’s vision for excellence.
Operational Excellence
- Ensure food is managed and stored correctly to minimise waste.
- Assist with the receipt and storage of deliveries.
- Communicate with the senior team and support their lead.
Health & Safety
- Comply with all client and company health & safety procedures and standards, including adherence to food information regulations and food safety checks.
- Adhere to food allergen and intolerance regulations.
- Implement an Allergen Management Process for all food production.
Essential Requirements
- Previous kitchen experience at similar level of responsibility
- Passionate about working in a food service environment.
- Ability to work positively with others as part of a team.
- Friendly, helpful, and polite.
Desirable Requirements:
- NVQ Level 2/3 in professional cookery or equivalent.
- Basic food hygiene certification (Level 2).
